Coconut Flour White Sauce Pizza Vegan Gluten Free

Equipment
- oven ,rolling pin, parchment paper½, blender or food processor
Ingredients
For the crust according to sweetashoney.co:
- ½ cup almond flour
- 1 cup coconut flour
- 6 tbsp whole psyllium husk
- 1 tsp sea salt or a quality salt
- 4 tsp baking powder
- 2 cup water
- 2 tsp apple cider vinegar
For the toppings these were my choice:
- ½ cup almond ricotta cheese
- 1 cup grated vegan cheese
- 1 cup sliced eggplant
- 1 cup sliced tomatoes
- ½ cup julienned onion
- 1 cup leafy greens to garnish
To make almond ricotta cheese or cashew ricotta cheese:
- 1 cup soaked almonds / cashews (overnight or soaked in hot water for 4-5 hours)
- ½ cup plant based milk
- 2 cloves garlic
- ¼ cup lemon juice
- ⅔ tsp sea salt / Himalaya salt
Instructions
To make the crust:
- Heat the oven to 220 °C (430°F).
- In a large bowl mix all the ingredients using a spoon in the beginning then knead with your hands for a minute or so.
- Shape a 2 balls and let them rest for 10 minutes.
- Use a rolling in to form a round shape out of each ball;I found it easier to shape the pizza crust using my hands and fingers.It can be a little bit tricky but it can be done.Don't give up.
- Bake the crust at 220°C for 15 minutes or so.
- Take both of the crusts out of the oven and add the toppings starting with spreading the ricotta cheese first.
To make the ricotta cheese - it can actually look like a thick sauce:
- Blend all the ingredients in a a blender or a food processor. Taste and adjust seasoning.That's it.It can be kept in the fridge for 5 days or even more.
Notes
- You can make small pizzas with these king of crust; that's why I made two of them.
- The most difficult part is when we have to use the rolling pin to shape the crust out of the dough ball.It was easier for me to use the rolling pin first then my hands and fingers.
- I prefer white sauce for pizza but feel free to use tomato sauce,too.Maybe you would choose to make one yourself instead of using a store bought one.
- I believe one of these pizzas is enough for a hungry person.
