
Coffee Flavoured Cake Vegan Gluten-free

- food processor,blender,cake tin 9x2 inch square or something similar
Ingredients
For the batter
- 2 tbsp flaxseed
- 2 tbsp chia seed
- 200 gr walnuts
- 320 gr oat flour
- 140 gr soft dark sugar
- 2½ tsp baking powder
- ¼ tsp salt
- 140 gr melted coconut oil
- 2 tsp instant espresso +110 ml water
For the frosting
- 200 gr caju or walnuts
- 5 tbsp dairy free spread
- 8 tbsp maple syrup
- 6-7 tbsp almond milk
Instructions
Let's make the batter
- Prepare the chia/flaxseed egg mixing with 8 tbsp water.Set aside for 15 minutes
- Preheat oven to 180°C / 160°C fan / 350°F
- Use a food processor to ground the walnuts and the oats if necessary.
- In a large bowl mix the ground walnuts,oat flour,sugar,baking powder and salt.
- Use a fork or your fingers to smash the lumps and to even out the dry mixture.
- Add the brewed coffee,melted coconut oil and the flaxseed/chia egg.
- If you think you need more moisture you can add a little bit of almond milk.
- Transfer the batter in a tin of your choice.
- Bake for 30 minutes until the edges are golden brown.
- Set aside to cool completely.
- Once cooled cut the cake to your preference and then spread the frosting over and decorate.
Let's make the frosting
- Blend all the ingredients together until smooth.If the mixture is too soft refrigerate for 30-60 minutes.
- Spread over the cooled cake and decorate with melted dairy free chocolate or anything else of your preference.
- Cut the cake before to your preference before spreading the frosting.
Notes
- This is not a kid-friendly recipe.Beware of the amount of coffee contained and do not consume the cake in the evening or at night if you are sensitive to caffeine.
