Jackfruit Cabbage Rolls Vegan Gluten Free

A plant based adaptation of a traditional romanian dish.

Equipment

Ingredients
  

Filling

  • 2 cups brown rice
  • 2 cubes yeast free vegetable stock
  • ½ tsp cardamon
  • cans jackfruit
  • cup oil of choice for frying
  • 1 large onion
  • 1 bunch parsely
  • ½ bunch chives
  • 2 tbsp miso paste
  • ½ tsp ground black pepper

Wrap

  • 2 -3 fermented cabbages (sauerkraut but not chopped,we use the cabbage leaves for this recipe).
  • 2 cups tomato sauce or you can make a marinara using fresh tomatoes and a food processor.You just need to add some herbs like thyme,oregano,basil,salt.

Filling

  • Boil the rice adding the cube stock and cardamon.Boil it just for 5 minutes.The rice will cook properly in the oven later on.
  • Chop the onion,you can add some green onions if desired.
  • Rinse the jackfruit well and cut it thoroughly and place it in a large bowl.You can use a potato masher to mash the jackfruit until it looks like shredded meat.
  • Add oil of choice in a frying pan and cook the onion and the jackfruit together with the lid on.
  • Add water and then miso paste and keep cooking with the lid on.
  • When the jackfruit and the onion look cooked add parsely,chives,pepper,salt.Mix well and cook few more minutes.
  • Add the rice over the jackfruit and mix well.Taste and add more salt and spices if desired.

Making the rolls

  • In your palm place a cabbage leaf once the tough stem part has been removed.Add a spoon of a mixture and wrap it up to look like a roll.Repeat until you used all the cabbage leaves and the mixture.
  • Chop the remaining sauerkraut, including the stems.
  • On the bottom of a large pot add some oil and make a layer out of the chopped sauerkraut.
  • Start arranging the cabbage rolls in the pot.Once it's done make another layer of sauerkraut on top of the cabbage rolls.
  • Preheat the oven to 180°C (350°F).
  • Pour the marinara sauce over,The cabbage rolls should be covered in liquid.Add some water if necessary.
  • Place in the oven with lid on for the first hour.
  • After an hour take the lid off so they can get a nice color.
  • They are traditionally served with polenta.Enjoy!
