Lentil Curry Falvoured Bread Gluten Free Vegan


Lentil Curry Flavoured Bread - Gluten Free / Vegan / Yeast Free

Another variation of gluten-free vegan bread
Prep Time 30 minutes
Cook Time 50 minutes
Servings 1 loaf - small

Equipment

  • 1 large bowl, a blender, whisk, loaf pan (I used 9 inch x 3 inch )

Ingredients
  

Flour combo

  • 1 cup lentil flour
  • 1 cup oat flour
  • cup coconut flour
  • cup brown rice flour
  • cup chickpea flour

Binders

  • 3 tbsp psyllium husk - rather flat than heaped
  • ½ cup unmodified potato starch

Raising agents

  • 2 tsp gluten free baking powder
  • ½ tsp gluten free baking soda

Liquids

  • 3 tbsp olive oil
  • 1 cup filtered water

Falvoring and spices

  • ¾ tsp himalaya salt
  • 1 tsp preferred curry powder

Instructions
 

  • Preaheat oven to 180°C (350°F ).
  • Mix psyllium husk in 1 cup water and let sit and gel up for 15 min.
  • In a large bowl mix together the dry ingredients.
  • Add the wet ingredients and mix well to combine,no need to overknead.It needs to be a thick dough- fell free to add more flour or water if needed.
  • Pour into a pan lined with parchment paper.
  • Sprinkle a mix of seeds and use a spoon to gentle push them in to make sure they stick to the dough.
  • Bake for 45-50 maybe 60 minutes,depending on the oven.Check the oven every 10-15 minutes.
  • Remove bread from pan and allow to cool completely before slicing.Make sure you place it on a rack.If not,turn it over every 5 minutes to prevent the bottom crust to become moist and soggy.
  • Enjoy

Notes

Flours
  • I used a blender to make lentil flour and oat flour.It saves some time if you have these ready made in your pantry, they are available for purchase in health stores, usually.
Loaf Pan
  • It is recommended to use small size loaf pans when baking gluten free to allow the bread to turn out moist at the core.
Flavours
  • I made the same bread with and without the curry flavour,it's your choice to use the curry powder or not,I found it interesting to experiment.
This recipe yields one loaf of bread , I made 2 variations as you can see in the pictures,with or without curry flavour.If you want to make 2 loaves of bread just double the recipe.
