Peanut Butter Cookies Vegan Gluten-Free

A really easy-quick cookies recipe ..nothing fancy but delicious.

  • 2 large bowls, oven


  • 1 cup oat flour
  • 1 cup coconut flour
  • 1 cup peanut butter
  • up to 1 cup coconut sugar or muscovado sugar or any other healthy type of sugar
  • 2/3 cup plant-based milk (oat / almond / etc)
  • 2 tsp high quality vanilla
  • 2 tsp baking soda
  • ¼ cup dairy- free chocolate chips - optional


  • In a large bowl mix the wet ingredients .
  • In a separate bowl mix well the dry ingredients.
  • Mix them all together and add dark chocolate chips. You should have a rather thick consistency.
  • Line a baking tray with parchment paper. Use a spoon or a scoop to make the cookies. You may choose to flatten them a little with the back of the spoon in the baking trey.
  • Bake at 180°C / 350°F for about 15 minutes depending on the oven. Best to keep an eye on them every 5 minutes.
  • Remove fro oven. Let it cool for 10 minutes. Serve and enjoy!


  • Depending on the type of flours you use, the consistency would be different. For example I tried using only oat flour and they turned out really crunchy. 
  • Using a mix of oat flour / coconut flour / almond flour they turn out a bit soft.
  • Depending on how sweet you want them you may increase the quantity of sugar from 1/2 cup to 1 cup.
  • It is highly advisable to keep an eye on them while in the oven. They might be ready in 10-12 or even 20 minutes depending on the oven.
