Peanut Butter Cookies Vegan Gluten-Free
A really easy-quick cookies recipe ..nothing fancy but delicious.

Equipment
- 2 large bowls, oven
Ingredients
- 1 cup oat flour
- 1 cup coconut flour
- 1 cup peanut butter
- up to 1 cup coconut sugar or muscovado sugar or any other healthy type of sugar
- 2/3 cup plant-based milk (oat / almond / etc)
- 2 tsp high quality vanilla
- 2 tsp baking soda
- ¼ cup dairy- free chocolate chips - optional
Instructions
- In a large bowl mix the wet ingredients .
- In a separate bowl mix well the dry ingredients.
- Mix them all together and add dark chocolate chips. You should have a rather thick consistency.
- Line a baking tray with parchment paper. Use a spoon or a scoop to make the cookies. You may choose to flatten them a little with the back of the spoon in the baking trey.
- Bake at 180°C / 350°F for about 15 minutes depending on the oven. Best to keep an eye on them every 5 minutes.
- Remove fro oven. Let it cool for 10 minutes. Serve and enjoy!
Notes
- Depending on the type of flours you use, the consistency would be different. For example I tried using only oat flour and they turned out really crunchy.
- Using a mix of oat flour / coconut flour / almond flour they turn out a bit soft.
- Depending on how sweet you want them you may increase the quantity of sugar from 1/2 cup to 1 cup.
- It is highly advisable to keep an eye on them while in the oven. They might be ready in 10-12 or even 20 minutes depending on the oven.
