Sweet Potato Oven-baked Fries with Guacamole Dip

A delicious and a lot more nutritious version of the classical fries

  • Oven


  • 3 large sweet potatoes
  • 3 tsp organic cornstarch / unmodified potato starch / tapioca flour
  • 4 tsp paprika powder
  • 3 tsp curry powder
  • 1 tsp sea salt
  • 2 tsp mix of herbs - oregano, rosemary, basil
  • tsp cayenne pepper
  • ½ cup olive oil


  • Mix the starch with the spices and herbs in a bowl.
  • Peel and cut the sweet potatoes lengthwise and as evenly as possible.
  • Preheat oven at 200°C( 400°F)
  • Spread them on parchment paper, in these case there are 2 batches.
  • Sprinkle the powder mix all over the potatoes and drizzle the olive oil.
  • Take your time and coat them all thoroughly in the powder and olive oil.
  • Bake in the oven for 30 minutes or more depending on the oven.
  • Remove from oven and serve with your favourite dip or sauce.I made guacamole dip this time.


  • Only soak the potatoes in cold water if you don't have everything ready once you sliced them to avoid oxidation.
  • In case you soaked them use a towel to absorb excess water before preparing them.
