
Sweet Potato Oven-baked Fries with Guacamole Dip
A delicious and a lot more nutritious version of the classical fries

Ingredients
- 3 large sweet potatoes
- 3 tsp organic cornstarch / unmodified potato starch / tapioca flour
- 4 tsp paprika powder
- 3 tsp curry powder
- 1 tsp sea salt
- 2 tsp mix of herbs - oregano, rosemary, basil
- ⅓ tsp cayenne pepper
- ½ cup olive oil
Instructions
- Mix the starch with the spices and herbs in a bowl.
- Peel and cut the sweet potatoes lengthwise and as evenly as possible.
- Preheat oven at 200°C( 400°F)
- Spread them on parchment paper, in these case there are 2 batches.
- Sprinkle the powder mix all over the potatoes and drizzle the olive oil.
- Take your time and coat them all thoroughly in the powder and olive oil.
- Bake in the oven for 30 minutes or more depending on the oven.
- Remove from oven and serve with your favourite dip or sauce.I made guacamole dip this time.
Notes
- Only soak the potatoes in cold water if you don't have everything ready once you sliced them to avoid oxidation.
- In case you soaked them use a towel to absorb excess water before preparing them.
